US sticks vs European blocks
The biggest source of butter confusion is that countries package it differently. In the US, butter comes in sticks: one stick is ½ cup, 113 g, 8 tablespoons or 4 oz, and the wrapper is printed with tablespoon markings so you can slice off what you need. In the UK and Europe, butter is sold in 250 g and 500 g blocks with no stick markings at all — so a US recipe calling for “1 stick” or “½ cup softened butter” leaves a lot of bakers guessing. The chart above translates between all of them.
Measuring, softened butter and salted vs unsalted
- Measure cold by weight or by the stick marks. Pressing soft butter into a measuring cup traps air and is hard to get accurate.
- Softened means cool room temperature — it holds a thumbprint but is not greasy or melting.
- Salted vs unsalted: most baking recipes assume unsalted. If you only have salted, cut the added salt by about ¼ teaspoon per ½ cup (1 stick) of butter.
