Different sugars, different weights
Not all sugars weigh the same per cup, so swapping one for another by volume can throw a recipe off. As a guide per US cup: granulated is about 200 g, caster (superfine) around 225 g because the finer crystals pack tighter, packed brown sugar about 220 g, and icing (powdered) sugar just 120 g because it is so light and airy. Treat those as starting points and weigh when you can.
Packing, sifting and safe swaps
- Brown sugar is always measured firmly packed unless the recipe states otherwise — loose brown sugar can leave you 30 g short per cup.
- Icing sugar should be sifted to break up lumps before measuring.
- Swaps: caster and granulated are usually interchangeable by weight, but icing sugar is not a drop-in for granulated — its volume, texture and how it dissolves are all different.
